I’ve got a good one for you today, mama’s! Not only is this out of this world tasty, but out of this world healthy too!
I know I’m not the only one who has gotten into the kale craze, right? It’s hard not to when it’s been labeled a superfood. I won’t get into the nitty gritty of what makes kale just so awesome, but head over here if you are interested in the break down of all the great nutrients found in kale.
The problem for most people is that kale isn’t all that yummy on it’s own. It’s pretty fibrous and is bland and earthy until it’s spiced up. And so with that, drum roll please, I bring you the Tuscan Kale Salad. A surefire and simple way to get your whole family to eat kale. (I promise, my kids really do eat this!)
:: Serves about 6::
1 bushel of Curly kale, sliced leaves with midribs removed
juice of 1 lemon
3-4 tablespoons sunflower oil
2 cloves garlic, mashed
salt & pepper, to taste
3 pinches of hot red pepper flakes (or more to taste)
2/3 cup grated Pecorino cheese (Asiago or Parmesan work well too)
*optional halved cherry tomatoes / *optional small cucumber slices
- Chop and prepare kale (*optional cherry tomatoes and cucumbers, chopped and halved)
- Whisk together lemon juice, sunflower oil, garlic, salt, pepper, and red pepper flakes.
- Place kale and additional ingredients into bowl and pour over dressing and toss well.
- Add the cheese and toss again.
- Let kale sit for at least 5 minutes.
- Serve and enjoy!
We paired with another superfood, grilled salmon. Seasoned with salt, pepper and some pre-made fish seasoning. Along with an easy staple of mine, Lundberg Risotto. I love making Risotto from scratch, but if you have ever made it, you know that it takes a good amount of time and commitment. In my everyday mom life, this is a great alternative.
All in all, a great meal!
